Subways Chicken Noodle Soup Recipe
There is nothing quite like enjoying a bowl of homemade chicken noodle soup like your mom used to make. I remember my own mother making it when we were growing up. It was the perfect remedy for a cold or even a bad day. It surely is the best way to warm you up on a cool winter night and make everything feel better!
As long as your chicken is cleaned, you are fine too. This recipe sounds good but I prefer to use brown rice and a small amount of quinoa. I also add a package of Mrs. Grass chicken soup mix so I do get some thin noodles too.
99% of the time the simplest recipes are the Best.I love Chicken Noodle Soup but making things easier for me; instead of cooking the chicken, I use meat from a Rotisserie Chicken; removing the skin and bones and shredding the meat.Something about a Rotisserie Chicken brings a nice flavor to the soup.Once all the meat is off the ones, I then make chicken stock by boiling the bones and the skin and then straining it all, putting into jars and freezing it. I do the same with all the turkey bones. Looks good ! I'm going to make it tomorrow . I have always cleaned a whole chicken then boiled it saving the broth to use for my soup or gumbo or any dishes needing broth. I feeeze my broth for future use & I am still kicking and cooking !
I use water, fresh chicken so you get some chicken fat, then take the excess fat of. TONE is the BOMB. When I freeze mine in servings, the noodles don't come apart. I do use a good quality of egg noodles though, not thin cheap ones.

I added a third of the butter I would normally use in my traditional chicken and dumplings recipe. Land O Lakes Butter in Half Sticks made it easy to pull just the right amount out of the fridge. Using Land O Lakes Butter with Olive Oil & Sea Salt created a rich, satisfying undertone.
My family and I LOVE this soup; we like it because it has the broth and not the heavy gravy. This is one of my regular soups that I make in our soup rotation. I add in some of the chicken flavored Better Than Bullion, it adds a little more chicken flavor and makes it even more delicious.
In theory, yes. You would want to slow cook the chicken soup base for several hours, until it comes to a good bubbling simmer. Then add the dumplings just 30 minutes before serving. I would not leave the dumplings on the slow cooker all day. Hope this helps!
I made the Chicken and Dumpling Soup tonight and it was soooo good. I am still thinking about the depth of the flavors. I frequently make chicken and/or vegetable soups but there was something really special about this recipe. I will definitely make it again.

Made a delicious broth; used kale instead of bok choy. The anise added subtle exotic flavor. Chicken perfect and served soup w/ rice & ramen noodles option, sliced boiled egg, green onion, spiraled carrots & sriracha sauce for heat!
Hi Nagi, this is the best poached chicken soup I have ever made. You are right, it is fool proof. I added some dried chilli flakes prior to serving which added a bit of heat. This will become a regulat on my dinner table. Thanks for sharing such a great recipe.
As part of an ongoing taste-test series, INSIDER tried chicken noodle soup from three different chains. Previously, we've sampled items ranging from hot chocolate and jelly donuts to chili and mac and cheese.
Filled with thick strips of noodles, chopped carrots and celery, and bite-size chicken pieces, the broth was rich but surprisingly peppery. The chicken itself had a chewy, almost rubbery texture. While not bad, it tasted the most processed, in our opinion.
Some diners might be intimidated by the uneven noodle-to-chicken ratio, but the pasta and the poultry were equally enjoyable. Although the broth was on the salty side, in our opinion, it tasted homemade.
Despite being the priciest option, Boston Market offered the most generous portion size out of three chains we sampled. Between the abundance of noodles and hearty chicken chunks, Boston Market's authentic-tasting, filling soup was the clear winner in our book.
If I do use canned chicken, it usually takes two large Costco sized cans or four of the smaller ones you'd pick up at the grocery store. And don't forget, rinsing canned chicken thoroughly before adding to soup is crucial.
If I am using canned chicken I like to add it a little sooner than if I was using a rotisserie chicken. Instead of waiting to add with the noodles I usually add it after the veggies are done sautéing.
If you are going to freeze any soup I suggest waiting to add the noodles until you reheat the broth. This will make sure that your pasta is cooked to perfection and does not become mushy when you reheat to enjoy later!
For a heartier soup you can choose to cut the carrots and celery into larger pieces. I just prefer a smaller bite so prefer to dice my veggies.
Bullion cubes are technically optional. I like to add them with the broth as it does provide more flavor.
